This black bean salad is so yummy! I have made this several times and tried many different variations of ingredients, but below is my favorite combination of flavors. 1/2 cup chopped onion
1/2 cup chopped red or green bell pepper
1/2 cup cooked and cooled brown rice
1/2 cup cooked and cooled quinoa
1 can (15 oz) drained and rinsed black beans
1/4 cup rice vinegar
1 clove minced garlic
1/2 teaspoon sea salt
1/4 teaspoon pepper
1 1/2 tablespoons coconut oil
1. In a bowl, stir together salad ingredients.
2. In a jar, combine all dressing ingredients.
3. Place a tight fitting lid on the jar and shake well until dressing is mixed.
4. Pour dressing over salad mixture and evenly coat. Chill for one hour.
