I absolutely love most fruits and vegetables. Sometimes, I want to include some fruit into my meals so I can eat something sweet without dessert after! This mango salsa is so yummy. I love it because you can add it to so many different things. You can put it on all kinds of proteins, dip chips in it, top off a baked potato and even just eat it by the spoonful. I am super guilty of that! My favorite is adding this mango salsa on top of mahi-mahi.
1 mango- peeled and diced
1 avocado- peeled and diced
Handful of cilantro
1/4 cup chopped red onion
1/4 cup chopped red pepper
1/2 - 1 whole jalapeno finely diced (depending on how spicy you like)
Juice of 1 lime
Salt & Pepper to taste
1. In a medium bowl, mix all ingredients together.
2. Stir evenly.
